What to cook in June

June is a great month for food, as you can create a number of tasty dishes for barbecues, picnics or just standard meals. Whether you're eating inside or making the most of the sunshine by dining in the garden, we have some tasty ideas for meals this month.

Why don't you try your hand at creating these dishes, they are sure to be a hit with your friends and family:

Garlic lemon salmon kebabs

This is a great choice if you're getting the grill out or just want a different option for teaming with your summer salad.

Start by chopping skinless salmon fillets into chunks that are big enough to skewer. Put these in a bowl and mix in a couple of minced cloves of garlic, fresh, chopped parsley, the zest of one lemon, lemon juice, olive oil, salt and pepper.

Leave to marinate for a few hours or overnight before putting onto your skewers - wooden skewers should be pre-soaked to avoid the fish sticking to them. You can either keep it simple by just putting salmon on the skewers or alternate between a chunk of fish and a folded slice of lemon.

Grill until the salmon is cooked through and serve. These are delicious hot or cold so you can even prepare them in advance.

Spicy prawn tacos

Another lovely seafood dish that is nice and light for summer is spicy prawn tacos. These are packed full of flavour and are sure to become a favourite.

Use cooked or fresh king prawns - just make sure fresh ones are fully cleaned. Create a marinade by mixing curry powder, cumin, ginger, cayenne, olive oil, the zest and juice of one lime, salt, pepper and a teaspoon of honey. Mix this into your bowl of prawns and allow to sit for a few hours or overnight if you want the prawns to be really spicy.

Make a crunchy and fresh coleslaw by slicing white and red cabbage into strips, combine this with slices of red onion, lime juice and fresh coriander. You can also add chilli slices for an extra kick.

Fry the shrimp, stirring them to ensure they stay covered in the marinade. You should only need to cook them for a few minutes as you don't want them to become rubbery.

Heat corn tortilla wraps or crispy taco shells and dish up starting with the coleslaw. Top the prawns with a spoonful of sour cream and enjoy!

Honey rosemary pork chops

Sometimes a classic choice is best, and what could be more classic than rosemary being teamed with pork? This recipe is really simple and will work with your Sunday roast just as well as your barbecue. 

Create a mixture of honey, olive oil, fresh chopped rosemary, salt and pepper. Use a pastry brush to glaze boneless pork chops with most of the mixture, saving some for the cooked meat, before putting them on the grill or in the oven.

Once cooked, brush the remaining glaze on the meat and let it sit for five minutes before serving.
